Dairy Alternatives are substances or products which replaces Dairy Products in diet or recipe. Lactose intolerance or allergy of milk products results in use of  Dairy Alternatives beverages; which are also consumed vegans. Some dairy alternatives are more healthy than milk, due to lower in cholesterol and saturated fats. The most commonly used as a milk substitutes are grain milk and plant milk. The most commonly used  grain milk is rice milk, whereas the most common plant milk is soy milk. Some other examples include coconut milk, almond milk and peanut milk etc.

Rice Milk: It is the most commonly used used grain milk processed from rice. it is mostly made from brown rice and unsweetened in taste. The sweetness in most rice milk varieties is generated by a natural enzymatic process, cleaving the carbohydrates into sugars, specially glucose. As compared to cow milk, rice milk contains more carbohydrates, but does not contains significant amount of calcium or protein and no cholesterol or lactose. 
Soy Milk: it is also called as soya milk, soybean milk, or soy juice is a beverage made from soybeans. It is a traditional cuisine of Asia, it is an stable mixture of oil, water and protein. it is made by soaking dry soybeans and grinding them with water. Soy milk contains same proportion of protein as a cow's milk around 3.5%, 2% fat, 2.9% carbohydrates and 5% ash.
Almond Milk: It is a beverage made from ground almonds, and frequently used as a substitute for dairy milk. It doesn't contains cholesterol  and lactose. As it does not contains any animal products it is suitable for vegans. Commercial almond milk products mainly come in plain, vanilla, or chocolate flavors and enrich with vitamins. Almond milk can also be made by grinding almonds with water in a blender. Almond milk is slightly beige in colour and has a creamy texture and nutty taste. Almonds are rich in nutrients including fiber, Vitamin E, magnesium, manganese, zinc, potassium, iron, phosphorous, copper and calcium. Almond milk has less protein than cow's milk.
Coconut Milk: It is produced form the grated meat of coconut. It is rich in taste and colour with saturated fat and it is very popular in Southeast Asia.
Peanut Milk: Peanut Milk is a beverage created from peanuts and water. It does not contains any lactose and therefore suitable for people with lactose intolerance. Similar in production to almond milk, soy milk, and rice milk the peanut are typically ground, soaked, sometimes heated and then filtered through a fine filter the resulting liquid is considered the milk.
As we see the dairy alternative market shows a significant growth due to reasons like lactose intolerance, milk allergies and vegans etc. Further due to continuous support from government and health associations in different regions this market is projected to grow further with a CAGR of 15% from 2013 to 2018. In past few years Asia - Pacific region dominates the dairy alternatives beverage market.
